Cake Courses & Tuition

I truly believe it is a great thing to be able to pass on the skills that you have and hand them down to future generations too, as well as give others the opportunity to increase their confidence, that’s how I started with my Mum, Sylvia.  Here at Sylvia’s Kitchen in the village of Hellingly, East Sussex, I have over twenty years’ experience of making wedding cakes and have seen styles, techniques and methods change enormously over that period.  I have been fortunate enough to have trained with top cake decorators including Eddie Spence MBE who has provided cakes over the years to the Royal Family, with Faye Cahill from Australia and many other international tutors.  With a dedicated, top rated (5) hygiene certificated kitchen, large enough to provide hands on tuition for up to four students per class, as well as one to one tuition being available and tailored to suit your individual needs, this provides the perfect opportunity to either learn a new skill or enhance your skills if you already have some cake decorating experience.

Full day classes include refreshments throughout the day as well as a light lunch.

Liz Chatfield from Sylvia’s Kitchen has joined forces with Jayne Kent, Chocolatier from HB Ingredients, Lewes to design and create this unique one day course at the HBHQ in Lewes.

During the course of the day you will learn how to cover and wrap a chocolate cake in tempered chocolate and decorate your cake with the chocolate decorations and filled chocolates that you make, having been shown, using hands-on techniques how to:-

Learn how to “tort” (cut, layer and fill) your chocolate sponge cake and cover ready for decorating

Temper chocolate with a technique you can use in your own home

Use chocolate transfer sheets to either wrap your cake or panel your cake in chocolate

Colour chocolate with different methods

Fill and roll hand made chocolates

Make coloured chocolate shards

Model roses and blossoms using moulding chocolate, coloured to suit your theme

Add finishing touches to your cake for final presentation



There will be a maximum of six students for the day so one to one tuition is easily available, with lunch and refreshments included.  All ingredients, equipment and materials will be supplied, together with a freshly baked chocolate cake from Sylvia’s Kitchen and you will be going home with your boxed Belgian Couverture Chocolate decorated Celebration Cake to wow your friends and family with, together with full course notes from your day.   Please feel free to ask  Jayne and Liz questions during the day to ensure you go home with all the information you need.

Arrival should be prompt at 9.15, to commence at 9.30, aiming to finish promptly at 4.00pm.

Ample free parking is available.
