Three tier wedding cake at Horsted Place Country House Hotel, Uckfield, East Sussex.  Iced in ivory with the base and top tiers finished in a pale champagne lustre.  Base tier embellished with hand piped royal icing lace design and top tier decorated with hand made, wired sugar full bloom David Austin style garden roses and leaves.  Base tier of Belgian couverture chocolate sponge with whipped Belgian couverture chocolate ganache, central tier of moist fresh lemon zest sponge with whipped lemoncurd buttercream and top tier of moist rich fruit cake.  Cake serves 120 finger portions or 60 dessert portions.  Images kindly provide by FitzGerald Photographic.
