Three Tier Wedding Cake at Hotel du Vin, Brighton, Sussex.  Base tier of Belgian Couverture chocolate sponge with whipped chocolate ganache filling, tier one of fresh lemon zest sponge with whipped lemoncurd buttercream and tier two of fresh coffee and walnut sponge with whipped coffee buttercream.  All tiers encased in rich whipped ombre buttercream, combined with Belgian couverture chocolate ganache to base tier.  Dressed with florals provided by Miss Mole’s Flower Emporium including Mariyo roses, bay, lavender, lisianthus, Chinese lanterns, soft ruscus and pine cones.  This was a beautiful woodland themed wedding.  Cake serves 120 finger portions.
