Three tiered square wedding cake at Blackstock Country Estate, Hellingly, East Sussex. Iced in pale ivory, with hand piped, pale ivory scroll work to the top of each tier, tiers all having a sharp edged finish. Wedding cake is dressed with silk ribbons and hand made sugar wired berries. Base tier of Madagascan vanilla bean sponge with whipped Madagascan vanilla bean paste buttercream and Raspberry Conserve. Central tier of Belgian couverture chocolate sponge with whipped Belgian couverture chocolate ganache filling and top tier of moist rich fruit cake. Cake serves 110 finger portions.
