Five tiered wedding cake at The View Hotel, Eastbourne, East Sussex.  All tiers covered in pale ivory, finished with trails of lustre, sparkle, micro pearls and hand piped royal icing leaf design, embellished with delicate sugar blossoms with hints of cafe au lait colouring.  Base tier of Madagascan vanilla bean sponge with whipped Madagascan vanilla bean paste buttercream and raspberry conserve.  Tier one of fresh lemon zest sponge with whipped lemoncurd buttercream.  Tier two of Belgian couverture chocolate sponge with whipped Belgian couverture chocolate ganache.  Tier three of caramel sponge with whipped toffee buttercream.  Tier four of moist rich fruit cake.  Cake serves approx 200 finger portions.  Images kindly supplied by John Scofield Photography.
