Well, what a day Jayne and I have had with our amazing students in Lewes, East Sussex today, we were so proud of them all! After booking on (some had the course as a present, some just treated themselves) everyone had been looking forward to this special one day course for some time (including me and Jayne).
I’d been baking all day yesterday to produce these lovelies, ready for our students to do their bit and they certainly did – look what they turned these blank canvases in to!
After watching a demo from me on filling and covering the cake, everyone had a go themselves, mastering techniques quickly.Our expert chocolatier Jayne from HB Ingredients then explained the tempering process and I showed the class different methods using a chocolate transfer sheet to decorate their cake – everyone picked a transfer sheet design they liked then some decided to go for the wrapped look, while others opted for chocolate panels. With such amazing students picking up the tuition so quickly we found ourselves ahead of time at stages!
We moved on to colouring chocolate with cocoa dusts and spreading chocolate out on the marble surfaces, good, messy fun and lots of clearing up for me and Jayne whilst everyone enjoyed creating shards, flakes and curls with the coloured chocolates to fill and dress their cakes, followed by a light lunch and some cake chatter.
One of my favourite bits of the day, demonstrating how to make a chocolate rose, so all huddled round for the tutorial then went and had a play themselves, learning both traditional and more modern “rolled up” style roses – with me giving one to one tuition and tips to get the best look they could achieve.
With the roses being left to set, Jayne then took over to demonstrate and talk chocolate, with the filling, topping and rolling of deliciously flavoured truffles. Both Champagne and Hazelnut flavours were included (apparently there was an overwhelming waft of Champagne in the room…!) More messy time with gloves donned and hands in bowls of luscious runny chocolate to “roll” the truffles and top with sprinkles and Hazelnuts.
The roses were then all dusted just in time to leave and do a tour of the warehouse, check out all the ingredients available and place some orders after having first hand experience of all the products that had been used during the day (and having tasted them of course!)
A thoroughly enjoyable day was had by all – with such a lovely group of students helping to create a relaxed learning atmosphere, thank you all very much ladies, I for one was certainly buzzing when I got home, I really hope they all enjoyed it as much as both Jayne and I did.
